Marinated Beef Fillet Recipe

Third episode of the series “what to serve with a lasagna recipe”. This is the time for the second dish: marinated beef fillet. Ingredients for six people:
600gr beef fillet, finely sliced
1 onion, chopped
1 shallot, chopped
8 tbsp extra-virgin olive oil
2 tbsp red wine vinegar
A couple of cloves
1 sprig of rosemary
1 bay leaf
1 handful of sage leaves
100 ml red wine
Salt and freshly ground black pepper

In a bowl add the diced vegetables, the herbs, 6 tbsp of olive oil and vinegar. Also add the clove, the salt and pepper. Add the fillet, make sure they are completely immersed in the marinate. Leave it there for three hours, then drip the meat it and put it in a casserole with the remaining oil, and sieve the marinate. Saute the meat on a medium heat for a couple of minutes until evenly browninsh, then turn up the heat a little more, then pour the wine and let it evaporate. Turn it down again to medium and add part of the marinate, cover the casserole and cook for ten more minutes.
When it’s ready, transfer it to a serving dish and serve immediately.
