Baked Cod Recipe

See how dedicated I am, I came home too late from the gym to cook this baked cod fillet recipe and eat it for dinner, so I had something else and cooked it anyway to post it here. I guess my lunch-mates will smell baked cod tomorrow in the canteen.
Ingredients for one person…
1 cod fillet
1 large potato (about 400gr)
1 large onion
1 red pepper
4-5 cloves of garlic
1 tbsp of grated parmesan
100ml of sieved tomatoes
A handful of chives to cover the cod
Extra-virgin olive oil, salt and freshly ground black pepper
This recipe for baked cod has a few passages, I blame the potatoes, as they have a ridiculously long cooking time to be vegetables (ok ok, there are also the legumes). But how can you bake cod without them?
Here it goes
Chop the onion and put it in a pan with 4 tbsp of oil, when it’s brown add the potatoes and let it cook for ten minutes, adding half glass of water if it starts to steam too much (it means it may burn if you don’t do something). Then add the peppers, let it go for five minutes and then add the sieved tomatoes.
Cook until the potatoes are tender, in the meantime preheat the oven at 180ºC (356ºF).
Line a baking tray with a double layer of aluminium foil, and transfer the vegetables when the potatoes are ready. Bake the veggies for 20 minutes.
in the meantime prepare the cod. Score the surface with a knife and sprinkle salt and pepper on it. Stick the garlic cloves in the meat (slice them in two if they are too big), add some olive oil and cover with the chives.
Take the vegetables out of the oven when after the 20 minutes have passed and place the cod on top. Seal the cling film ad cook for another 20 minutes.
Last passage: take it out of the oven open the tinfoil, add Parmesan on top and put it back, with tinfoil open, and grill for 7-10 minutes.
I’ll tell you tomorrow how this baked cod recipe healthy came out, I already had a sandwich for dinner today…
