Spinach Sauce Recipe

Here’s the fourth spinach recipe, this time a spinach sauce. This one is really good for many things: to as pasta sauce (with a good amount of cheese), to spread on bread as an appetizer, or to serve on the side of chicken fillet.

800gr spinach
1 pinch of white pepper
1 tbsp flour
40gr butter
250ml milk
A pinch of salt

Cook the spinach with very little water for five minutes in a pan. Drain them, squeeze them and blend them in a mixer.
In the same pan, melt the butter on a medium heat, and add the milk and the spinach mix. Season with salt and let it cook until it has thickened, stirring from time to time. If it tends to remain too runny, add a tbsp of flour and keep it on the fire for ten minutes more. Take off the stove, check the salt and add the white pepper.
