Rice and Spinach Soup

And here we go with the last spinach recipe of the series, a rice and spinach soup.
200gr spinach
3 tbsp extra-virgin olive oil
200gr rice
20 tbsp Parmesan, grated
2 potatoes
1 litre stock
Half onion, finely chopped
Peel, wash, dry and dice the potatoes. Wash, drain, and dry the spinach and coarsely chop them.
Heat the oil in a casserole, and sauté the onion on e medium heat for 10-12 minutes. add the spinach and the potatoes, and let it cook for a couple of minutes, then add almost all the hot stock and the rice and cook on a medium heat for the time required on the rice packet, stirring from time to time with a wooden spoon. Add more stock if necessary. At the end of the cooking time you should get a fairly liquid soup. Add a generous sprinkle of Parmesan and serve hot.
