Spinach Pudding Recipe

Very short spinach recipe this time (and second of the series fo five), but don’t be fooled by this spinach pudding, it’s sophisticated enough.
Ingredients for four people:
80gr Emmental cheese, grated
250gr frozen spinach
1 tbsp butter
50cl milk
2 egg yolks
1 whole egg
A pinch of salt
Add the frozen spinach to a pan with plenty of salted water and cook for a couple of minutes from when the water starts boiling again.
In a bowl, work the whole egg with the yolks, then add the cheese. Bring the milk almost to boil and add it to the mix, a little at the time, stirring with a whip or a wooden spoon. Add the spinach and blend with a food mixer. Take four individual molds and cook in bain-marie for 20-30 minutes, let them cool for ten minutes and transfer to the dish.
