Stuffed Peppers Recipe With Ground Beef

One of the Italian cookbooks that I’ve had for a while is called Italy: The Country and Its Cuisine. It’s pretty heavy and definitely not pocket size, and no celebrity chef wrote it, but I definitely recommend it. The recipes are divided by regions and it will give you an insight of Italian food from a cultural perspective as well.

This stuffed peppers recipe with ground beef is taken from there, in the section for the southern region of Basilicata.

4 peppers (green in the original recipe, but green peppers suck, so I went for yellow instead)
1 onion, finely chopped
2 cloves of garlic, finely chopped
100gr rice (it doesn’t have to be risotto rice, choose the normal, cheaper type)
400gr minced beef (which is actually more than enough for this stuffed pepper recipe. Peppers from Basilicata are probably gigantic).
2 eggs
1 tbsp fresh parsley, chopped
1 tsp dried oregano
Salt and freshly ground black pepper

Cook the rice according to the packet instructions in boiling salted water then drain and let it steam.
Preheat the oven at 230ºC. Cut off the top of the peppers and remove the seeds and inside core. Add the rest of the ingredients to a bowl and mix with a fork (or, better, with your hands), then stuff the peppers, gently pressing the meat inside. Put the top back and bake for 15 minutes covered with tinfoil. Then bake for 30-35 minutes more.

These stuffed peppers with rice are good served with any temperature.
